Chefs Kiss Meatloaf

There’s something incredibly comforting about a traditional meatloaf baking in the oven. This classic homestyle recipe comes together quickly with simple pantry ingredients, making it perfect for busy weeknights when you want a warm, satisfying dinner without spending hours in the kitchen.

The meatloaf turns out tender and flavorful thanks to a blend of ground beef, milk, bread crumbs, and onion. A sweet and tangy glaze made with ketchup, brown sugar, and mustard bakes right on top, creating a delicious caramelized finish that pairs perfectly with mashed potatoes, roasted vegetables, or a simple side salad.

Ingredients

  • 1 1/2 pounds ground beef
  • 1 large egg
  • 1 medium onion, finely chopped
  • 1 cup milk
  • 1 cup dried bread crumbs
  • Salt and pepper, to taste
  • 1/3 cup ketchup
  • 2 tablespoons brown sugar
  • 2 tablespoons prepared mustard

Directions

  1. Preheat the oven to 350°F (175°C) and lightly grease a 9×5-inch loaf pan.
  2. In a large mixing bowl, combine the ground beef, chopped onion, milk, bread crumbs, and egg.
  3. Season the mixture with salt and pepper, then mix until everything is evenly combined.
  4. Press the meat mixture evenly into the prepared loaf pan, shaping it into a compact loaf.
  5. In a small bowl, whisk together the ketchup, brown sugar, and mustard until smooth.
  6. Spread the glaze evenly over the top of the meatloaf.
  7. Bake for about 1 hour, or until the meatloaf is fully cooked and the center reaches 160°F (70°C) on an instant-read thermometer.
  8. Remove from the oven and let the meatloaf rest for 5 to 10 minutes before slicing.
  9. Slice and serve warm.

Tip: Crushed crackers can be used instead of bread crumbs for a slightly richer flavor and extra texture.
