If you love grilled cheese with golden, crispy edges and gooey melted cheese in every bite, this Inside-Out Grilled Cheese Sandwich is about to become your new favorite comfort food.
Instead of keeping all the cheese tucked neatly inside, this clever method lets sharp Cheddar melt directly onto the skillet, creating an irresistible crunchy cheese crust on the outside of the sandwich.
Made with buttery white bread and loads of extra sharp Cheddar, this sandwich delivers the perfect combination of crispy, crunchy, buttery, and melty textures.
It’s quick enough for lunch, easy enough for a late-night snack, and indulgent enough to satisfy every grilled cheese craving.

Total Time: 15 minutes
Servings: 1 sandwich
Ingredients
- 2 tablespoons butter, divided
- 2 slices light white bread
- 1/2 cup shredded extra sharp Cheddar cheese, divided
Directions
- Heat a large nonstick skillet over medium-low heat. Add 1 1/2 tablespoons butter and allow it to melt completely.
- Place both slices of bread into the skillet so the bread absorbs the melted butter.
- Sprinkle about 1/4 cup of shredded Cheddar cheese onto one slice of bread.
- Place the second slice of bread on top with the buttered side facing upward to form the sandwich.
- Sprinkle about 2 tablespoons of cheese over the top of the sandwich.
- Add the remaining 1/2 tablespoon butter directly into the skillet beside the sandwich.
- Carefully flip the sandwich onto the melted butter so the cheese-covered side is now touching the skillet.
- Top the sandwich with the remaining shredded cheese and cook for 3 to 4 minutes, or until the cheese underneath becomes crispy, golden brown, and caramelized.
- Flip the sandwich one final time and cook another 3 to 4 minutes until the second side develops the same crispy cheese crust and the inside is fully melted.
- Remove from the skillet, let cool slightly, then slice and serve immediately.
Chefs Notes
- Use soft white sandwich bread for the crispiest texture and best browning.
- Extra sharp Cheddar gives the sandwich bold flavor and creates a better crispy cheese crust.
- Keep the heat at medium-low to avoid burning the cheese before the inside melts properly.
- Try adding cooked bacon, tomato slices, or thinly sliced jalapeños for extra flavor.
- A quality nonstick skillet makes flipping much easier and helps prevent sticking.
