  • 1/2 cup confectioners’ sugar, plus more for dusting
  • 1 cup butter, softened
  • 4 large eggs
  • 1 1/2 cups white sugar
  • 1/2 cup fresh lemon juice
  • 1 tablespoon lemon zest

Directions

  1. Preheat your oven to 350 degrees F (175 degrees C).
  2. In a large mixing bowl, combine 2 cups of the flour with the confectioners’ sugar. Cut in the softened butter until the mixture resembles coarse crumbs and forms a soft dough.
  3. Press the dough evenly into the bottom of a 9×13-inch baking pan to create the crust layer.
