Ingredients
- 1 pound sliced bacon
- 2 1/2 pounds russet potatoes, peeled and quartered
- 3 cloves garlic, peeled
- 1 cup milk
- 3 tablespoons butter
- 1/2 cup mayonnaise
- 1/4 cup sour cream
- 1/2 teaspoon freshly ground black pepper
- 1/4 teaspoon paprika
- 1 1/2 cups shredded Cheddar cheese, divided
- Chopped green onions, for garnish
Directions
- Preheat the oven to 350°F (175°C) and grease a 9×13-inch baking dish.
- Cook the bacon in a large skillet over medium-high heat until crispy, about 10 minutes. Turn occasionally to ensure even cooking. Transfer to paper towels to drain, then crumble once cooled.
- Bring a large pot of salted water to a boil. Add the potatoes and garlic, reduce heat to medium, and simmer until fork-tender, about 15 to 20 minutes.
- While the potatoes cook, heat the milk and butter together in a small saucepan over low heat until the butter is fully melted.
- Drain the potatoes and return them to the pot. Gradually add the warm milk mixture, mashing until smooth and creamy. Stir in mayonnaise, sour cream, black pepper, and paprika.
- Fold in 1 cup of the shredded Cheddar cheese and half of the crumbled bacon.
- Spread the mashed potato mixture evenly into the prepared baking dish. Top with the remaining cheese and bacon.
- Bake for about 20 minutes, or until the cheese is melted and bubbly.
- Garnish with chopped green onions and serve warm.
