This is a simple, hearty dinner that’s perfect for busy nights when you don’t want to think too hard or dirty a lot of dishes.
Everything cooks on one pan, the ingredients are inexpensive, and the flavors come together naturally from roasting. It’s filling without being heavy and works well for leftovers the next day.
The beauty of this recipe is its flexibility. You can use any fully cooked sausage you like (smoked, kielbasa, chicken, or turkey), and the potatoes crisp up nicely while soaking in the sausage flavor.
It’s a no-fuss meal that’s great for weeknights and doesn’t rely on sauces or complicated seasoning.
