Ingredients

  • 2 (12-ounce) packages bulk pork sausage
  • 1 medium bell pepper, chopped
  • 1 medium onion, chopped
  • 3 cups frozen hash brown potatoes
  • 2 cups shredded Cheddar cheese, divided
  • 2 cups milk
  • 1 cup Original Bisquick mix
  • 4 large eggs
  • 1/4 teaspoon ground black pepper

Directions

  1. Preheat the oven to 400°F (200°C). Lightly grease a 13×9-inch baking dish.
  2. Place a skillet over medium heat. Add the sausage, chopped bell pepper, and onion.
  3. Cook while stirring occasionally until the sausage is fully browned and no pink remains.
  4. Drain excess grease and transfer the sausage mixture to the prepared baking dish.
  5. Add the frozen hash browns and 1 1/2 cups of the shredded Cheddar cheese. Stir until evenly combined.
  6. In a separate bowl, whisk together the milk, Bisquick mix, eggs, and black pepper until smooth.
  7. Pour the egg mixture evenly over the sausage and potato mixture in the baking dish.
  8. Place the dish in the oven and bake uncovered for 40 to 45 minutes, or until a knife inserted in the center comes out clean.
  9. Remove the casserole from the oven and sprinkle the remaining 1/2 cup of Cheddar cheese on top.
  10. Return to the oven and bake for another 1 to 2 minutes, just until the cheese melts.
  11. Let the casserole rest for about 5 minutes before slicing and serving.
