  • 2 cups chicken stock
  • 1 1/2 cups broccoli florets, coarsely chopped

  • 1 stalk celery, thinly sliced
  • 2 1/2 cups shredded sharp Cheddar cheese

Directions

  1. In a skillet over medium-high heat, melt 1 tablespoon of butter. Add the chopped onion and sauté until soft and translucent, about 5 minutes. Remove from heat and set aside.
  2. In a large saucepan over medium-low heat, whisk together the melted butter and flour to form a smooth roux. Cook for 3 to 4 minutes, whisking constantly to prevent burning. Add a splash of milk if needed to keep the mixture smooth.
  3. Slowly pour in the milk while whisking continuously to create a creamy base. Stir in the chicken stock and bring the mixture to a gentle simmer.
