Ingredients

  • 2 teaspoons olive oil
  • 2 pounds Italian sausage links, cut into 2-inch pieces
  • 1/4 cup olive oil
  • 4 large potatoes, peeled and thickly sliced
  • 2 large green bell peppers, seeded and cut into wedges
  • 2 large red bell peppers, seeded and cut into wedges
  • 3 large onions, cut into wedges
  • 1/2 cup white wine
  • 1/2 cup chicken stock
  • 1 teaspoon Italian seasoning
  • Salt and freshly ground black pepper, to taste

Directions

  1. Preheat your oven to 400°F (200°C).
  2. Heat 2 teaspoons olive oil in a large skillet over medium heat. Add the sausage pieces and cook, stirring occasionally, until browned on all sides, about 5 to 10 minutes. Transfer the sausage to a large baking dish.
  3. Add 1/4 cup olive oil to the same skillet. Cook the sliced potatoes, stirring occasionally, until they begin to brown and develop a light crust, about 10 minutes.
  4. Transfer the potatoes to the baking dish with the sausage, reserving a little oil in the skillet.
  5. Add the green peppers, red peppers, and onions to the skillet. Cook and stir until they begin to soften, about 5 minutes.
  6. Transfer the vegetables to the baking dish.
  7. Pour the white wine and chicken stock evenly over the sausage and vegetables. Sprinkle with Italian seasoning, salt, and black pepper.
  8. Gently toss everything together to combine.
  9. Bake uncovered for 20 to 25 minutes, or until everything is hot, tender, and bubbling.
  10. Serve hot and enjoy.
