Ingredients

  • 2 fully trimmed pork tenderloins, about 1 1/4 pounds each, cut into 8 pieces
  • Salt and freshly ground black pepper, to taste
  • 2 tablespoons all-purpose flour, plus more if needed
  • 2 large eggs, beaten
  • 3 cups panko bread crumbs
  • 2 tablespoons butter
  • 1/3 cup diced dill pickles
  • 1 jalapeño pepper, seeded and minced
  • 1 bunch green onions, chopped, green tops reserved for garnish
  • 1 pinch cayenne pepper, or to taste
  • 1 1/2 tablespoons all-purpose flour
  • 1 1/2 cups cold milk, plus more if needed
  • 1 teaspoon Worcestershire sauce, or to taste
  • 1/4 teaspoon freshly ground black pepper, or more to taste
  • 1/2 cup vegetable oil, divided, for frying
  • Salt, to taste

Directions

  1. Place the pork pieces between two sheets of heavy plastic wrap or inside resealable freezer bags. Using the smooth side of a meat mallet, pound each piece to an even thickness of about 1/2 inch.
  2. Transfer the pork to a plate and season both sides generously with salt and black pepper. Lightly dust each piece with 2 tablespoons flour, coating both sides.
  3. Pour the beaten eggs over the pork and turn the pieces until they are evenly coated.
  4. Place the panko breadcrumbs in a shallow bowl. Press each pork piece firmly into the breadcrumbs, coating both sides thoroughly.
  5. Arrange the breaded cutlets on a clean plate, cover with plastic wrap, and refrigerate for 15 minutes to help the coating set.
  6. While the cutlets chill, make the gravy. Melt the butter in a skillet over medium heat. Add the diced pickles, jalapeño, green onions, and cayenne pepper. Cook, stirring often, until the onions soften, about 3 minutes.
  7. Sprinkle in 1 1/2 tablespoons flour and cook, stirring constantly, for about 3 minutes.
  8. Slowly whisk in 2 to 3 tablespoons cold milk until smooth. Gradually stir in the remaining milk, then add Worcestershire sauce and black pepper.
  9. Reduce the heat to low and simmer the gravy for about 5 minutes, stirring occasionally, until thickened. Taste and adjust seasoning as needed. Keep warm.
  10. Heat 1/4 cup vegetable oil in a large skillet over medium-high heat. Add half of the breaded pork cutlets and cook for 4 to 5 minutes per side, or until the crust is deeply golden and the pork is cooked through.
  11. Transfer the cooked cutlets to a paper towel-lined plate and sprinkle lightly with salt.
  12. Repeat with the remaining vegetable oil and pork cutlets.
  13. Serve the crispy pork cutlets hot, topped with the creamy jalapeño pickle gravy and garnished with the reserved green onion tops.
