Total Time: 15 minutes
Ingredients
- 2 (5-ounce) cans tuna, drained
- 1/4 cup mayonnaise
- 1/4 cup finely chopped celery
- 1 1/2 tablespoons finely chopped onion
- 1 tablespoon chopped fresh parsley
- 3/4 teaspoon red wine vinegar
- Salt, to taste
- Freshly ground black pepper, to taste
- 4 slices seedless rye bread
- 8 slices Swiss cheese
- 8 slices ripe tomato
- Paprika, for garnish
Directions
- Position an oven rack about 6 inches below the broiler and preheat the broiler.
- In a medium mixing bowl, combine the drained tuna, mayonnaise, celery, onion, parsley, and red wine vinegar. Season with salt and freshly ground black pepper, then stir until well combined.
- Arrange the rye bread slices on a baking sheet and broil for about 1 minute, just until lightly toasted. Remove from the oven while leaving the broiler on.
- Spread an even amount of the prepared tuna salad over each slice of toasted rye bread.
- Top each sandwich with one slice of Swiss cheese.
- Arrange two tomato slices over the cheese on each sandwich.
- Finish each sandwich with a second slice of Swiss cheese, completely covering the tomatoes.
- Return the baking sheet to the oven and broil for 3 to 5 minutes, or until the cheese is fully melted, bubbling, and lightly golden.
- Remove from the oven, sprinkle lightly with paprika, and serve immediately while hot and gooey.
Chef’s Notes
- Layering cheese both under and over the tomatoes helps keep the toppings from sliding off the sandwich.
- Marble rye or sourdough bread also works wonderfully if seedless rye isn’t available.
- Add sliced bacon or avocado for an extra hearty diner-style sandwich.
- Serve with crispy potato chips, dill pickles, or French fries for the complete diner experience.
- For even crispier bread, lightly butter each slice before toasting under the broiler.
