Ingredients

  • 10 (6-inch) corn tortillas
  • 2 cups shredded mozzarella cheese
  • 1 (2-ounce) can sliced black olives
  • 2 avocados, peeled, pitted, and sliced
  • 2 teaspoons hot pepper sauce

Directions

  1. Gather all ingredients and prepare your toppings by slicing the avocados and draining the olives.
  2. Heat a large frying pan or griddle over medium heat.
  3. Place one tortilla flat onto the heated pan and cook for about 1 minute until lightly warmed.
  4. Flip the tortilla and sprinkle slightly more than 1/4 cup of shredded cheese evenly over the surface.
  5. Add a small portion of sliced olives, avocado, and a drizzle of hot pepper sauce over the cheese.
  6. Place a second tortilla on top to form a sandwich and cover the pan with a lid.
  7. Cook for about 1 minute, then carefully flip the quesadilla and cook until the cheese is fully melted and the tortillas are lightly crisped.
  8. Transfer to a plate and repeat with remaining ingredients.
  9. Cut each quesadilla into triangles and serve warm with sour cream and salsa if desired.

Chefs Notes

  • For extra flavor, try adding cooked chicken, steak, or sautéed vegetables.
  • If you prefer a crispier texture, lightly butter the pan before cooking the tortillas.
  • Swap mozzarella for cheddar, Monterey Jack, or a Mexican cheese blend for a more traditional flavor.
  • Adjust the heat level by increasing or reducing the hot pepper sauce.
