Total Time: 1 hr 15 mins
Servings: 6
Yield: 1 (8×8-inch) casserole

Ingredients

  • 5 cups French bread, cut into cubes
  • 1 ½ cups milk
  • 4 large eggs
  • ¼ cup granulated sugar, divided
  • ¼ teaspoon salt
  • 1 teaspoon vanilla extract
  • 1 tablespoon butter, softened
  • 1 teaspoon ground cinnamon

Directions

  1. Preheat oven to 350°F (175°C). Lightly grease an 8×8-inch baking dish.
  2. Spread the bread cubes evenly across the bottom of the prepared dish.
  3. In a large bowl, whisk together milk, eggs, 2 tablespoons of the sugar, salt, and vanilla extract until smooth and fully combined.
  4. Pour the custard mixture evenly over the bread cubes, gently pressing down to help the bread absorb the liquid. Dot the top with small pieces of butter.
  5. Let the mixture sit for about 15 minutes so the bread can soak up the custard.
  6. In a small bowl, mix the remaining 2 tablespoons of sugar with the cinnamon. Sprinkle evenly over the top.
  7. Bake for 45 to 50 minutes, or until the center is set and the top is golden brown.
  8. Remove from oven and let cool slightly before serving. Serve warm with maple syrup or fresh fruit.

Chefs Notes

  • Day-old bread works best since it absorbs more of the custard without becoming soggy.
  • For a richer flavor, substitute brioche or challah for the French bread.
  • This casserole can be assembled the night before—just cover tightly and refrigerate, then bake in the morning.
  • To reheat leftovers, use the oven instead of the microwave to maintain the best texture.
