  • 1 cup brown sugar
  • 1 cup water
  • 1 onion, chopped
  • 4 cloves garlic, minced
  • 1 tablespoon freshly grated ginger root
  • 1 tablespoon ground black pepper
  • 1 tablespoon dried oregano
  • 1 teaspoon crushed red pepper flakes (optional)
  • 1 teaspoon cayenne pepper (optional)
  • 1 teaspoon paprika (optional)
  • 5 pounds skinless chicken thighs

Directions

  1. In a large glass or ceramic mixing bowl, whisk together soy sauce, brown sugar, water, chopped onion, garlic, ginger, black pepper, oregano, red pepper flakes, cayenne pepper, and paprika until fully combined.
  2. Add the chicken thighs to the marinade and toss until evenly coated. Cover the bowl tightly with plastic wrap and refrigerate for at least 1 hour. For deeper flavor, marinate for several hours or overnight.
  3. Preheat an outdoor grill to medium heat and lightly oil the grill grate to prevent sticking.
  4. Remove the chicken from the marinade and discard the remaining liquid.
  5. Place chicken thighs on the preheated grill and cook for about 15 minutes per side, or until the chicken is fully cooked and nicely charred around the edges.
  6. Use an instant-read thermometer to ensure the internal temperature reaches 165 degrees F (74 degrees C).
