- 4 red potatoes
- 3 tablespoons olive oil, divided
- 1 onion, chopped
- 1 green bell pepper, seeded and chopped
- 1 teaspoon salt
- ¾ teaspoon paprika
- ¼ teaspoon ground black pepper

Directions
- Bring a large pot of salted water to a boil. Add the potatoes and cook until just tender but still firm, about 15 minutes. Drain well, allow to cool slightly, then cut into 1/2-inch cubes.
