Yield: 1 (9×13-inch) pan
Ingredients
- Cooking spray
- 2 (8-ounce) packages refrigerated crescent roll dough, divided
- 2 fresh lemons, zested and juiced, divided
- 2 (8-ounce) packages cream cheese, softened
- 1/2 cup granulated sugar
- 2 tablespoons butter, melted
- 3 tablespoons granulated sugar
Directions
- Preheat the oven to 350°F (175°C). Line a 9×13-inch baking dish with aluminum foil, leaving enough overhang on the sides to lift the bars out later. Lightly coat the foil with cooking spray.
- Unroll one package of crescent roll dough and press it evenly into the bottom of the prepared baking dish, stretching it gently to cover the entire surface.
- In a mixing bowl, combine the juice of both lemons with three-quarters of the lemon zest. Add the softened cream cheese and 1/2 cup sugar. Beat with an electric mixer until smooth, creamy, and fully incorporated.
- Spread the lemon cream cheese mixture evenly over the dough layer in the baking dish.
- Unroll the second package of crescent roll dough and carefully place it over the cream cheese filling. Gently stretch the dough to reach the edges and completely cover the filling.
- Brush the top layer with melted butter.
- In a small bowl, combine the remaining lemon zest with the remaining 3 tablespoons sugar. Sprinkle the mixture evenly over the buttered dough.
- Bake for approximately 30 minutes, or until the top is beautifully golden brown and lightly crisp.
- Remove from the oven and allow the bars to cool in the pan for about 20 minutes.
- Using the foil overhang, carefully lift the dessert from the baking dish and transfer it to a cutting board. Cut into squares while still supported by the foil.
- Return the cut bars to the baking dish and refrigerate for at least 1 hour, or until thoroughly chilled.
- Serve cold for the best texture and flavor.
Chef’s Notes
- Fresh lemon juice and zest provide the brightest flavor and are highly recommended over bottled juice.
- For cleaner slices, chill the bars thoroughly and wipe the knife clean between cuts.
- A dusting of powdered sugar just before serving adds an elegant finishing touch.
- Store leftovers covered in the refrigerator for up to 5 days.
- These bars can be made a day ahead, making them perfect for parties, potlucks, and holiday dessert trays.
