  • 2 cups diced Yukon Gold potatoes
  • 1 (10.5-ounce) can condensed cream of chicken soup
  • 1 (10.5-ounce) can Cheddar cheese soup
  • 4 cups chicken broth
  • 1 tablespoon Cajun seasoning
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 4 cups chopped rotisserie chicken
  • 5 strips bacon, cooked and chopped
  • 1/2 cup sour cream
  • 1/2 cup shredded creamy mozzarella cheese

Garnishes

  • 1/4 cup shredded Cheddar cheese
  • Cooked and crumbled bacon
  • Sliced scallions
  • Crushed buttery round crackers, such as Ritz®

Directions

  1. Melt butter in a large soup pot over medium heat. Add chopped onion and celery and cook for 4 to 5 minutes, stirring occasionally, until softened. Season lightly with salt and black pepper.
  2. Add diced Yukon Gold potatoes, cream of chicken soup, Cheddar cheese soup, and chicken broth to the pot. Stir well until combined.
  3. Season the soup with Cajun seasoning, garlic powder, and onion powder. Bring to a gentle simmer and cook for about 5 minutes.
  4. Stir in the chopped rotisserie chicken and cooked bacon. Reduce heat to low and continue simmering for 15 to 20 minutes, stirring occasionally, until the potatoes are tender and the flavors have blended together.
  5. Remove the pot from heat and stir in sour cream and mozzarella cheese until fully melted and creamy.
  6. Ladle soup into bowls and garnish with shredded Cheddar cheese, extra bacon, sliced scallions, and crushed buttery crackers before serving.

Chefs Notes

  • For extra richness, add a splash of heavy cream before serving.
  • Yukon Gold potatoes hold their texture beautifully and add a buttery flavor to the soup.
  • Adjust the Cajun seasoning to make the soup milder or spicier depending on your preference.
  • This soup thickens as it cools, making leftovers even creamier the next day.
  • Serve with crusty bread or buttery biscuits for the ultimate comfort food meal.
