Ingredients

  • Cooking spray
  • 1 teaspoon vegetable oil (for pan)
  • 2 tablespoons freshly grated Parmesan cheese
  • 1/2 teaspoon salt
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon paprika
  • 1/4 teaspoon ground black pepper
  • 2 pounds red potatoes, halved
  • 1 tablespoon vegetable oil
  • 1/4 cup sour cream (optional, for serving)

Directions

  1. Preheat your oven to 400°F (200°C). Lightly coat a 9×13-inch baking dish or cast iron skillet with cooking spray, then add about 1 teaspoon of vegetable oil to coat the bottom.
  2. In a small bowl, combine the Parmesan cheese, salt, garlic powder, paprika, and black pepper.
  3. Pat the cut sides of the potatoes dry with a paper towel to remove excess moisture for better crisping.
  4. Place the potatoes in a large bowl and drizzle with 1 tablespoon of vegetable oil. Toss until evenly coated, then sprinkle in the Parmesan mixture and toss again until well coated.
  5. Arrange the potatoes cut-side down in the prepared pan, pressing them gently into the pan to help the Parmesan stick.
  6. Bake for 15 to 20 minutes, then flip the potatoes and continue roasting for another 15 to 20 minutes, or until golden brown and crispy on the outside.
