Ingredients

  • 2 pounds 85% lean ground beef
  • 1 cup chopped onion
  • 3 cloves garlic, minced
  • 1 (12-ounce) package frozen mixed vegetables
  • 1 1/2 cups lower-sodium beef broth
  • 1/4 cup tomato paste
  • 1 tablespoon Worcestershire sauce
  • 1 tablespoon quick-cooking tapioca, finely crushed
  • 1 teaspoon dried Italian seasoning
  • 1/2 teaspoon salt
  • 1/2 teaspoon freshly ground black pepper
  • 2 (24-ounce) packages refrigerated mashed potatoes
  • 1 cup shredded Cheddar cheese
  • Paprika, to taste
  • Chopped fresh parsley, for garnish

Directions

  1. Gather and measure all ingredients before beginning.
  2. In a large skillet over medium heat, cook the ground beef and chopped onion for about 8 minutes, or until the beef is browned and the onion is tender. Stir in the minced garlic and cook for 1 minute more, until fragrant. Drain off any excess fat.
  3. Transfer the cooked beef mixture to a 5- to 6-quart slow cooker. Stir in the frozen mixed vegetables.
  4. In a small bowl, whisk together the beef broth, tomato paste, Worcestershire sauce, crushed tapioca, Italian seasoning, salt, and pepper. Pour the mixture over the beef and vegetables, stirring to combine evenly.
  5. Cover and cook on Low for 4 to 6 hours or on High for about 3 hours, until the mixture is hot and slightly thickened.
  6. Prepare the mashed potatoes according to package directions if required. Stir the shredded Cheddar cheese into the mashed potatoes until smooth and creamy.
  7. Spread the cheesy mashed potatoes evenly over the beef mixture in the slow cooker. Cover and cook on High for an additional 20 minutes, until heated through.
  8. Sprinkle with paprika and garnish with chopped fresh parsley before serving.
