Ingredients

  • 1/4 cup olive oil
  • 1/4 cup soy sauce or salt to taste
  • 1 medium lemon, juiced
  • 3 cloves garlic, crushed
  • 1 teaspoon dried oregano
  • 3 pounds pork tenderloin, cut into 1-inch cubes
  • 2 medium yellow onions, cut into 1-inch pieces
  • 2 medium green bell peppers, cut into 1-inch pieces
  • Wooden skewers, soaked in water
  • Tzatziki sauce and pita bread for serving (optional)

Directions

  1. In a large glass bowl, whisk together olive oil, soy sauce, lemon juice, garlic, and oregano until well combined.
  2. Add the pork cubes, onion pieces, and green bell peppers to the bowl. Toss everything thoroughly to coat in the marinade. Cover and refrigerate for 2 to 3 hours for the best flavor.
  3. Preheat an outdoor grill to medium-high heat and lightly oil the grill grates.
  4. Remove the pork and vegetables from the marinade and shake off any excess liquid. Thread the pork, onions, and peppers onto the soaked skewers, alternating ingredients as desired. Discard any remaining marinade.
  5. Place the skewers on the preheated grill and cook for 10 to 15 minutes, turning frequently, until the pork is nicely charred and cooked through.
  6. Use an instant-read thermometer to ensure the pork reaches an internal temperature of at least 145 degrees F (63 degrees C).
  7. Serve hot directly from the skewers or tucked into warm pita bread with tzatziki sauce.

Chefs Notes

  • Pork tenderloin stays especially tender and juicy on the grill, but pork loin can also be used if preferred.
  • For extra Mediterranean flavor, add a sprinkle of fresh parsley or dill before serving.
