- 3 large russet potatoes, scrubbed
- 1/4 cup minced shallots
- 1 tablespoon kosher salt
- 1/2 teaspoon freshly ground white pepper
- 1 pinch cayenne pepper, or to taste
- 2 1/2 cups grated sharp white Cheddar cheese
- 1 3/4 cups sour cream

- Wrap each potato in aluminum foil and place them on a baking sheet. Pierce each potato a few times with a knife.
- Bake for about 1 hour and 15 minutes, or until the potatoes are very tender and easily pierced.
- Allow the potatoes to cool completely. Once cooled, unwrap and place them on a plate. Cover and refrigerate for at least 8 hours or overnight.
- Preheat the oven to 425°F (220°C) and lightly butter a casserole dish.
