Prep Time: 15 minutes
Cook Time: 50 minutes
Total Time: 1 hour 5 minutes
Servings: 6
Yield: 1 (9×13-inch) casserole

Ingredients

  • 1 ½ pounds thick-cut bacon
  • ½ cup chopped sweet onion
  • ½ cup chopped red bell pepper
  • 12 large eggs
  • 1 cup milk
  • 1 (16-ounce) package frozen hash browns, thawed
  • 1 cup shredded Cheddar cheese
  • 1 teaspoon salt
  • ½ teaspoon ground black pepper
  • ¼ teaspoon dried dill

Directions

  1. Preheat your oven to 350°F (175°C) and lightly grease a 9×13-inch baking dish.
  2. Cook the bacon in a large skillet over medium-high heat until crispy, turning as needed. Transfer to paper towels to drain, reserving about 2 tablespoons of the bacon drippings in the pan. Once cooled, crumble the bacon and set aside.
  3. Add the chopped onion and red bell pepper to the skillet with the reserved drippings. Cook over medium heat until softened, about 5 minutes. Remove with a slotted spoon and set aside.
  4. In a large mixing bowl, whisk together the eggs and milk until fully combined.
  5. Stir in the hash browns, shredded cheese, salt, pepper, dill, sautéed vegetables, and crumbled bacon until evenly mixed.
  6. Pour the mixture into the prepared baking dish and spread it out evenly.
  7. Bake for 35 to 45 minutes, or until the center is set and a knife inserted comes out clean.
  8. Let the casserole rest for a few minutes before slicing and serving.

Chefs Notes

  • Swap in turkey bacon for a lighter option without sacrificing flavor.
  • For extra richness, use half-and-half instead of milk.
  • Add mushrooms, spinach, or jalapeños to customize the flavor profile.
  • This casserole can be assembled the night before and baked fresh in the morning.
  • Leftovers reheat beautifully, making it perfect for meal prep.
