Ingredients

  • 4 (6 to 8 ounce) russet or Yukon Gold potatoes

  • 1 teaspoon onion powder
  • 1/2 teaspoon paprika
  • 1/4 teaspoon salt
  • 1/4 teaspoon ground black pepper
  • 1/4 cup butter, melted

Dipping Sauce

  • 1/2 cup mayonnaise
  • 1/4 cup sour cream
  • 2 tablespoons ketchup
  • 1 tablespoon prepared horseradish
  • 1 tablespoon white vinegar
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1/2 teaspoon paprika
  • 1/2 teaspoon salt
  • 1/2 teaspoon ground black pepper

Directions

  1. Wash and scrub the potatoes thoroughly to remove any dirt. Pat dry with a towel.
  2. Using a sharp knife, slice each potato crosswise into 1/8-inch-thick cuts, stopping about 1/2 inch from the bottom so the potato remains intact. Rotate the potato and repeat lengthwise with the same type of cuts, creating a “blooming” pattern while keeping the base attached.
  3. Place the sliced potatoes into a 2-quart baking dish. Cover with vented plastic wrap and microwave on high for 5 minutes to begin softening them.
  4. In a small bowl, mix garlic powder, onion powder, paprika, salt, and black pepper.
  5. Brush the potatoes generously with melted butter, making sure some butter drips into the sliced layers. Sprinkle evenly with the seasoning mixture.
  6. Preheat the oven to 425°F (220°C). Line a baking sheet with aluminum foil and place the potatoes on the prepared pan.
  7. Bake for 15 to 20 minutes, or until the edges are crispy and the potatoes are golden brown.
  8. While the potatoes bake, prepare the dipping sauce by stirring together mayonnaise, sour cream, ketchup, horseradish, vinegar, garlic powder, onion powder, paprika, salt, and black pepper in a medium bowl until smooth.
  9. Serve the hot bloomin’ potatoes with the dipping sauce on the side.
