  • 1 (16-ounce) package medium shell pasta
  • 1 pound sliced bacon
  • 4 ripe Roma tomatoes, diced
  • 1 small red onion, finely chopped
  • 1 cup ranch dressing
  • 1/2 teaspoon freshly ground black pepper
  • 1 head romaine lettuce, shredded (about 3 cups)

Directions

  1. Bring a large pot of lightly salted water to a boil. Add the shell pasta and cook until tender according to package directions, about 8 minutes.
  2. Drain the pasta and rinse under cold water until completely cooled. Set aside.
  3. Meanwhile, cook the bacon in a large skillet over medium-high heat until crispy and browned.
  4. Transfer the bacon to a paper towel-lined plate to drain excess grease, then crumble into bite-sized pieces.
  5. In a large mixing bowl, combine the cooled pasta, about 3/4 of the crumbled bacon, diced tomatoes, chopped red onion, ranch dressing, and black pepper.
  6. Toss everything together until evenly coated in the creamy dressing.
  7. Fold in the shredded romaine lettuce just before serving to keep it crisp and fresh.
  8. Top with the remaining bacon and serve immediately.
