Easy Peasy Peanut Butter Cookies

RECIPE:

SERVES: 12

PREP: 3 minutes

COOK: 12 minutes

INGREDIENTS:

  • 1 cup peanut butter
  • ¾ cup granulated sugar
  • 1 large egg

DIRECTIONS:

  1. Preheat oven to 350°F (177°C). 
  2. In a large bowl, using a hand mixer, mix together peanut butter, granulated sugar and egg.
  3. Roll into 12 to 24 equal-sized balls (depending on the size you want them to be).
  4. Flatten each ball with a spatula. Score with a fork if desired. 
  5. Bake for 10-12 minutes. 
  6. Allow to rest for 5 minutes. Enjoy!

Being a Google Connoisseur, I wanted to use a fun way to describe this recipe. Being a Millennial has its rewards. Yes, a lot of us in this particular age group saturate content almost as quickly as we can blink, but it can also be a double-edged sword. Why? Because we often lack patience when teaching or simply showing our parents, perhaps the Gen Xers or maybe a Baby Boomer, how quickly we assess information at our busy fingertips, mostly our thumbs. 

Unfortunately, most of us Millennials and Gen Zers cannot bear to look away from our phones or tablets to see the confused look on a Gen Xer or Baby Boomer’s face when we are rapidly entering the information that they are trying to grasp at their snail’s pace. On more than one occasion, my mom, who is in the Gen X category, had to ask me to slow down and I have tried but failed miserably.  While she is taking notes on pen and paper, I am getting more impatient. Then, finally, she will say that she can figure it out, which is a code word for she is too frustrated with my speediness to keep up. Blame it on technology. Computers have been around before I was born and I know that I need to meet my mother where she is, but we Millennials have things to do at warp speed.  Our thumbs never get tired and our brain is always in motion. 

That is why I love cooking and baking.  It relaxes me.  I put my phone away and get lost in my thoughts while listening to some mellow music or just talking to family and friends. Everybody is on the same page. Creating a good meal or making a good dessert requires patience. I escape in my mind when I am in the kitchen. That is why I wanted to call these cookies Easy Peasy Peanut Butter Cookies. Of course, I was curious about the easy peasy origin. So what did this Millennial do?  I Googled it.

Google told me that Easy Peasy is an idiom. In Google’s words-“If something is easy peasy, it is very easy indeed.”  (Easy Peasy, lemon squeezy is also used.) This week, I present to you, Easy Peasy Peanut Butter Cookies. Three simple ingredients. I used peanut butter, an egg, and sugar.  All staples we have in our homes. No-fuss and no frustration. Not even something you have to write down. See how easy peasy that is?

  

No matter what generation age category below in which you are defined, according to data compiled by Beresford Research, the latest group, Gen Alpha, will process information even faster. Even I, as a Millennial, have a hard time processing that one.
