Ingredients

  • 3 tablespoons olive oil

  • 1 large head cauliflower, cut into florets
  • Salt and ground black pepper, to taste
  • 1/3 cup grated Parmesan cheese
  • 1 tablespoon chopped fresh parsley

Directions

  1. Preheat your oven to 450°F (220°C). Lightly grease a 9×13-inch baking dish or casserole dish.
  2. In a large bowl or resealable bag, combine olive oil and minced garlic. Add the cauliflower florets and toss until evenly coated.
  3. Transfer the coated cauliflower to the prepared baking dish and spread it out in an even layer. Season with salt and black pepper.
  4. Roast in the preheated oven for about 25 minutes, stirring halfway through, until the cauliflower is tender and beginning to brown.
  5. Remove the dish from the oven and switch the oven to broil.
  6. Sprinkle the Parmesan cheese and chopped parsley evenly over the cauliflower.
  7. Return to the oven and broil for 3 to 5 minutes, or until the cheese is melted and lightly golden.
  8. Serve hot and enjoy.

Chefs Notes

  • For extra crispiness, spread the cauliflower on a baking sheet instead of a casserole dish to avoid crowding.
  • Add a squeeze of lemon juice before serving for a bright, fresh finish.
  • Try mixing in paprika, Italian seasoning, or red pepper flakes for additional flavor.
  • Use freshly grated Parmesan for the best texture and taste.
