Ingredients

  • 6 tablespoons unsalted butter
  • 1 cup self-rising flour
  • 1 ¾ cups white sugar, divided
  • 1 ½ tablespoons unsweetened cocoa powder
  • ½ cup milk
  • 1 teaspoon vanilla extract
  • ¼ cup unsweetened cocoa powder
  • 1 ½ cups boiling water

Directions

  1. Preheat the oven to 350°F (175°C). Place the butter in an 8-inch square baking dish and put the dish in the oven while it heats so the butter melts completely.
  2. In a medium bowl, whisk together the self-rising flour, ¾ cup of the sugar, and 1½ tablespoons cocoa powder. Add the milk and vanilla extract, stirring until the batter becomes smooth.
  3. In a separate small bowl, combine the remaining 1 cup sugar with the ¼ cup cocoa powder, mixing well.
  4. Carefully remove the hot baking dish from the oven. Pour the prepared batter evenly over the melted butter—do not stir. Sprinkle the sugar and cocoa mixture evenly across the top.
  5. Slowly pour the boiling water over the entire dish. Again, do not stir the layers.
  6. Bake for about 30 minutes, or until the top looks set and slightly crisp while a rich chocolate sauce forms underneath.
  7. Serve warm, preferably with a scoop of vanilla ice cream for an extra indulgent dessert.

Cook’s Note: To make a larger batch, simply double the ingredients and bake the cobbler in a 9×13-inch baking dish.
