These roasted garlic-Parmesan fingerling potatoes are the kind of side dish that quietly steals the spotlight. Fingerling potatoes have a naturally creamy texture and a subtle sweetness that sets them apart from standard potatoes, making them perfect for roasting at high heat until golden and tender.
Finished with savory Parmesan, fragrant garlic, and a touch of fresh lemon zest, these potatoes develop irresistibly crispy edges while staying soft inside. They’re easy enough for a weeknight dinner but flavorful enough to serve alongside steak, roasted chicken, or any special-occasion meal.
Ingredients
- 1 pound fingerling potatoes, halved lengthwise
- 2 cloves garlic, minced
- 2 tablespoons grated Parmesan cheese
- 1 teaspoon lemon zest
- ½ teaspoon salt
- ¼ teaspoon freshly ground black pepper
- 2 tablespoons olive oil
- 1 tablespoon butter
- 2 tablespoons chopped fresh parsley
Directions
- Preheat the oven to 425°F (220°C). Gather and prepare all ingredients.
- In a large bowl, combine the fingerling potatoes, garlic, Parmesan cheese, lemon zest, salt, and black pepper. Drizzle with olive oil and toss until the potatoes are evenly coated.
- Heat a cast-iron skillet over medium-high heat. Add the butter and allow it to melt. Add the potatoes and toss for about 2 minutes, just until coated in the butter.
- Transfer the skillet to the preheated oven. Roast for 15–20 minutes, tossing halfway through, until the potatoes are tender and lightly browned.
- Remove from the oven and sprinkle with fresh parsley before serving.
