Southern Green Beans

There’s something deeply comforting about a pot of Southern-style green beans simmering away on the stove.

This dish brings together tender green beans, hearty potatoes, smoky bacon, and savory aromatics into one rich, satisfying side that feels like it belongs at every family table.

It’s simple, rustic cooking at its best—where a handful of everyday ingredients transform into something truly memorable.

The magic comes from layering flavors slowly.

The bacon adds a smoky depth, the potatoes soak up all the savory goodness, and a splash of vinegar at the end brightens everything just enough to balance the richness.

Whether you’re serving this alongside a holiday feast or a weeknight dinner, this dish delivers that classic Southern comfort in every bite.

Ingredients

  • 6 slices bacon, chopped
  • 3 tablespoons butter
  • 1 red onion, chopped
  • 2 pounds fresh green beans, trimmed and snapped
  • 8 small new potatoes, diced
  • 1 large clove garlic, minced
  • 1/4 cup chicken broth
  • 1 1/2 teaspoons white balsamic vinegar
  • Salt and pepper to taste

Directions

  1. Place a large skillet over medium heat and cook the chopped bacon, stirring occasionally, until crispy and evenly browned, about 8 to 10 minutes. Transfer bacon to a paper towel-lined plate and set aside.
  2. Reduce heat to medium-low and add butter to the same skillet. Once melted, add the chopped onion and cook until softened and translucent, about 5 minutes.
  3. Stir in the cooked bacon, green beans, diced potatoes, minced garlic, and chicken broth. Mix well to combine.
  4. Increase heat to bring the mixture to a gentle boil, then cover with a lid and reduce heat to low. Simmer for about 10 minutes, or until the green beans are tender and the potatoes are cooked through.
  5. Finish by stirring in the white balsamic vinegar. Season with salt and pepper to taste, then serve warm.

Chefs Notes

  • For deeper flavor, leave a small amount of bacon drippings in the pan instead of draining completely.
  • If you prefer softer, more Southern-style green beans, simmer an additional 5–10 minutes.
  • Swap red onion for yellow onion if you want a milder flavor profile.
  • A splash of apple cider vinegar can be used in place of white balsamic for a more traditional Southern tang.
  • This dish reheats beautifully, making it perfect for leftovers or meal prep.
