Southern Peach Cobbler

This fresh Southern peach cobbler is everything a classic summer dessert should be—sweet, juicy, and bursting with the natural flavor of ripe peaches.

Each bite delivers tender, syrupy fruit layered beneath a golden, buttery topping that’s lightly crisp on the outside and soft on the inside.

It’s the kind of dessert that feels nostalgic, like something passed down through generations and perfected over time.

What makes this cobbler truly stand out is its balance of warm spices and bright citrus notes, which enhance the peaches without overpowering them.

The homemade topping comes together quickly and bakes into a rustic crust that soaks up just enough of the peach juices.

Serve it warm straight from the oven, and if you want to take it over the top, add a scoop of vanilla ice cream melting into every crevice.

Yield: 1 (2-quart) cobbler

Ingredients

  • 8 fresh peaches, peeled, pitted, and sliced into thin wedges
  • 1/4 cup white sugar
  • 1/4 cup brown sugar
  • 1/4 teaspoon ground cinnamon
  • 1/8 teaspoon ground nutmeg
  • 1 teaspoon fresh lemon juice
  • 2 teaspoons cornstarch
  • 1 cup all-purpose flour
  • 1/4 cup white sugar
  • 1/4 cup brown sugar
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 6 tablespoons unsalted butter, chilled and cut into small pieces
  • 1/4 cup boiling water
  • 3 tablespoons white sugar
  • 1 teaspoon ground cinnamon

Directions

  1. Preheat your oven to 425°F (220°C).
  2. In a large bowl, combine sliced peaches, 1/4 cup white sugar, 1/4 cup brown sugar, cinnamon, nutmeg, lemon juice, and cornstarch. Toss until the peaches are evenly coated.
  3. Transfer the peach mixture to a 2-quart baking dish and bake for 10 minutes.
  4. While the peaches bake, prepare the topping by mixing flour, 1/4 cup white sugar, 1/4 cup brown sugar, baking powder, and salt in a large bowl.
  5. Add the chilled butter and cut it into the dry ingredients using your fingertips or a pastry blender until the mixture resembles coarse crumbs.
  6. Stir in boiling water just until the mixture comes together.
  7. Remove the peaches from the oven and drop spoonfuls of the topping evenly over the hot fruit.
  8. In a small bowl, mix the remaining 3 tablespoons sugar with 1 teaspoon cinnamon and sprinkle evenly over the cobbler.
  9. Return to the oven and bake for about 30 minutes, or until the topping is golden brown.
  10. Let cool slightly before serving.

Chefs Notes

  • Use ripe, in-season peaches for the best flavor and natural sweetness.
  • If your peaches are extra juicy, you can add an extra teaspoon of cornstarch to thicken the filling.
  • This cobbler is best served warm, especially with a scoop of vanilla ice cream.
  • Leftovers can be stored in the refrigerator and reheated gently in the oven.
