Prep Time: 30 minutes
Cook Time: 30 minutes
Total Time: 1 hour
Servings: 4

Ingredients

  • 4 medium potatoes
  • 4 large eggs
  • 1/2 cup mayonnaise
  • 1/2 stalk celery, chopped
  • 1/4 cup sweet relish
  • 1 clove garlic, minced
  • 2 tablespoons prepared mustard
  • Salt and black pepper, to taste

Directions

  1. Wash the potatoes thoroughly and place them into a large pot of salted water. Bring to a boil over medium-high heat and cook until the potatoes are tender but still firm enough to hold their shape, about 15 minutes.
  2. Drain the potatoes and allow them to cool slightly before chopping them into bite-sized chunks.
  3. Meanwhile, place the eggs into a saucepan and cover with cold water. Bring the water to a boil, then remove the pan from the heat, cover, and let the eggs stand for 10 to 12 minutes.
  4. Transfer the eggs to cold water, peel them, and chop into small pieces.
  5. In a large mixing bowl, combine the chopped potatoes, chopped eggs, mayonnaise, celery, sweet relish, minced garlic, and mustard.
  6. Season with salt and black pepper to taste, then gently stir until everything is evenly coated.
  7. Serve warm for the best Southern-style flavor and texture.

Chefs Notes

  • For extra flavor, sprinkle the finished potato salad with paprika before serving.
  • Yukon Gold potatoes work especially well because of their creamy texture.
  • If you prefer a tangier salad, add a splash of pickle juice or a little extra mustard.
  • This potato salad can also be chilled for several hours if you prefer a colder side dish.
  • Add chopped green onions or diced red onion for additional crunch and flavor.
