Ingredients

  • 1/4 cup cider vinegar
  • 3 tablespoons prepared coarse-ground mustard, or to taste
  • 3 cloves garlic, minced
  • Juice of 1 lime
  • Juice of 1/2 lemon
  • 1/2 cup brown sugar, or to taste
  • 1 1/2 teaspoons salt, or to taste
  • Ground black pepper, to taste
  • 6 tablespoons olive oil
  • 6 skinless, boneless chicken breast halves

Directions

  1. In a large glass or ceramic bowl, combine the cider vinegar, coarse-ground mustard, minced garlic, lime juice, lemon juice, brown sugar, salt, and black pepper. Whisk until well blended.
  2. Slowly whisk in the olive oil until the marinade is smooth and fully combined.
  3. Add the chicken breasts to the bowl and toss to coat evenly in the marinade. Cover the bowl tightly and refrigerate for at least 8 hours or overnight for maximum flavor.
  4. When ready to cook, preheat an outdoor grill to high heat and lightly oil the grill grate.
  5. Remove the chicken from the marinade and discard any remaining marinade.
  6. Place the chicken on the preheated grill and cook for 6 to 8 minutes per side, or until the chicken is fully cooked and the juices run clear.
  7. Transfer the chicken to a serving platter and let rest for a few minutes before serving.

Chefs Notes

  • For extra flavor, marinate the chicken overnight.
  • This marinade also works wonderfully with chicken thighs, pork chops, or shrimp.
  • If you do not have an outdoor grill, you can cook the chicken in a grill pan or bake it in the oven at 400°F until fully cooked.
  • Add a pinch of crushed red pepper flakes for a subtle spicy kick.
  • Serve with grilled corn, roasted potatoes, or a fresh garden salad for a complete meal.
