Total Time: 40 minutes

Ingredients

  • 2 cups baking mix (such as Bisquick)
  • 2 cups shredded sharp Cheddar cheese, divided
  • 1 cup milk
  • 5 tablespoons pure maple syrup
  • 2 large eggs
  • 1 1/2 tablespoons granulated sugar
  • 12 slices cooked bacon, crumbled

Directions

  1. Preheat your oven to 350°F (175°C). Lightly grease a 9×13-inch baking dish with nonstick cooking spray or butter.
  2. In a large mixing bowl, combine the baking mix, 1 cup of the shredded Cheddar cheese, milk, maple syrup, eggs, and sugar. Stir until the ingredients are evenly incorporated and a smooth batter forms.
  3. Pour the batter into the prepared baking dish and spread it evenly with a spatula.
  4. Bake for 20 to 25 minutes, or until the casserole is puffed, lightly golden, and a toothpick inserted into the center comes out clean.
  5. Remove the casserole from the oven and evenly sprinkle the crumbled bacon over the top. Finish with the remaining 1 cup of shredded Cheddar cheese.
  6. Return the casserole to the oven and bake for an additional 5 minutes, or until the cheese has completely melted.
  7. Allow the casserole to rest for about 5 minutes before slicing into squares. Serve warm with extra maple syrup on the side for drizzling.

Chef’s Notes

  • Use thick-cut bacon for extra smoky flavor and hearty texture.
  • Sharp Cheddar provides the best flavor, but Colby Jack or Monterey Jack are delicious substitutes.
  • Add cooked breakfast sausage, diced ham, or sautéed onions for additional savory flavor.
  • This casserole can be assembled several hours ahead of time and refrigerated until ready to bake.
  • Leftovers store well in the refrigerator for up to 3 days and reheat beautifully in the microwave or oven.
  • Serve with fresh fruit, scrambled eggs, or hash browns for a complete breakfast spread.
