Easy Chocolate Dipped Coconut Cookies

RECIPE:

SERVES: 24

PREP: 10 minutes

CHILL: 15 minutes 

INGREDIENTS:

  • 24 store-bought coconut cookies
  • 1 cup semi-sweet chocolate chunks, melted

DIRECTIONS:

  1. Using either the microwave or stovetop, melt 1 cup semi-sweet chocolate chunks. 
  2. Dip coconut cookies into chocolate covering only halfway. 
  3. Lay flat on a parchment paper-lined baking sheet.
  4. Place in the refrigerator for 10-15 minutes to chill.
  5. Remove from the refrigerator. Enjoy!

Blame it on the soaring hot temperatures everywhere, but for the life of me, I had the hardest time turning on my oven or stove this week. That is why I made this recipe as simple and as easy as I could fathom. I decided to use a store-bought Coconut Cookie that I Dipped in Chocolate. I did not stress about it because going to the grocery store in the unbearable heat, even for a few minutes, made me feel dipped in discomfort. Does anyone else feel this way every now and then? If so, I know you will understand why I took a much-needed shortcut. Personally, I feel it is important to step away from routine every now and then and take a break. We spend way too much time being hard on ourselves, nitpicking every little imperfect presentation, whether it is food-related, work-related, or in personal areas of our lives. 

Melted chocolate

The kitchen is one of my favorite hang-out spots. It is where I get to create all of my yummy recipes that I have been sharing with you. I love it because memories are often created by food experiences. I appreciate it when my family and friends stop by to eat a meal that I made just for them. They know that I love to cook and bake with love. And, while I was dipping these cookies into the melted chocolate, I knew I had saved myself a lot of time in the kitchen so that I could cool off with a nice cold glass of water while enjoying the humming of my much needed overworked air-conditioner.

It took me less than five minutes to melt the semi-sweet chocolate chunks in a medium-sized saucepan. Then, I took the coconut cookie and dipped it into the melted chocolate. Beforehand, I laid out a cookie sheet and lined it with parchment paper to place the dipped cookies. I then transferred the dipped cookies to the refrigerator, so that the melted chocolate could get hard. I allowed the dipped cookie to set for about ten to fifteen minutes. Once the cookies were ready to come out of the refrigerator, I grabbed two off the platter for myself. I packed the extras and placed them in a Ziplock bag and put them back in the refrigerator. 

Feel free to leave them out in an ambient setting as well. I like out of sight out of mind. If I do not see the cookie on the countertop, then, I do not grab a cookie or two or three throughout the day. That is the tactic I use when it comes down to sweets. I can never eat just one, but know that I can be dangerous if I am tempted.  

I like coconut and I like chocolate. Actually, I love chocolate. If you like coconut and love chocolate too, I truly hope you will try this quick and simply easiest way to turn a plain store-bought cookie into a tasty and sweeter treat. Again, recipes don’t have to be Perfect with hours of laboring over a hot stove. I encourage you to give yourself a break and decide to be Perfectly Imperfectly in the kitchen and beyond. Enjoy!!
